Strawberry Ice Lollies!

IMG_20160628_181257 (1)These ice lollies are great for kids and so quick and simple to make. They are full of nutrition and a good dose of healthy probiotics. Which is a great way to keep the stomach happy. The first ingredient in this magical recipe is strawberries.

Strawberries are an excellent source of vitamin C and K and they provide a good dose of fibre, folic acid, manganese and potassuim. As well as these nutrients, they also contain a significant amount of phytonutrients and flavanoids which makes strawberries bright red. Strawberries have been used throughout history in a medical context to help with the digestive system, teeth whitening and skin irritatations. Their fibre and fructose content may help regulate blood sugar levels by slowing digestion down and the fibre is thought to have a satiating effect.

The leaves of the strawberry plant can be eaten raw, cooked or used to make tea. The vibrant red colour of the strawberries is due to the large amounts of anthocyanidin which also means they contain powerful antioxidants and are thought to protect against inflammation, cancer and heart disease.

The next ingredient in this recipe is Yeo Valley Natural Yogurt. This type of yogurt is full of probiotics which are friendly bacteria. Probiotics are naturally present in the digestive system. Live strains of these ‘good bacteria’ are also found in many yogurt products and fermented food.

More research needs to be done but there’s some evidence to suggest that strains of probiotics can help to boost the immune system and promote a healthy digestive tract. Eating yogurt will not only give you a healthy gut but it also gives the body a dose of animal protein. Plus several other nutrients found in dairy food, like calcium, vitamin B-2, vitamin B-12, potassium and magnesium.

The third ingredient in this delicious recipe is honey. Raw honey is different from the average honey you buy in the supermarket. In fact it is very different because it has not been pasturised, heated or processed in any way. Therefore, raw honey contains valuable benefits to the body.

Honey in its raw form contains minerals, vitamins, enzymes and powerful antioxidants. It has anti-bacterial, anti-fungal and anti-viral properties. It can help promote digestion, strengthen the immune system, eliminate allergies, stabilise blood pressure, balance blood sugar levels and calm nerves. Taking a spoonful of honey once or twice a day is a great help.

With all of these fantastic ingredients packed into a delicious lolly, what’s not to like? They are a great way to get probiotics into your children from an early age. My son loves them and during this summer has eaten a few. So go on give it a go.

Equipment needed

  • Chopping board
  • Small sharp knife
  • Mixing bowl
  • Stick blender, food processor or fork
  • Tablespoon
  • Teaspoon
  • Ice lolly moulds

Ingredients

  • Yeo Valley Natural Yogurt x 500mls IMG_20160629_213555
  • Fresh strawberries x 200g
  • Honey x 2 tbsp
  • Cinnamon x 1 tsp
  • Vanilla powder x 1 pinch

Method

  • Start by huling the strawberries and then cut them into quarters.
  • Add them to the mixing bowl and put all the other ingredients in as well.
  • Now, if you have children then you could get them to mash all the ingredients together with the fork.
  • If you want a quicker method you could use your stick blender or food processor.
  • Blend until you have the right consistitency and pour into the ice lolly moulds.
  • Put in the freezer for at least six hours or overnight preferably.
  • When you want to eat take out and place the molds under a hot tap until the ice lolly loosens.
  • Eat immediately.

These are really quick and taste so much better than the ice lollies you can buy in the supermarket. If you like a smooth consistitency then I would use the food processor but if you like your ice lolly with a few strawberry bits then I would use a stick blender. With a stick blender you can get it to the right consistitency, whereas a food processor will just smooth it all out. Whatever way you eat your ice lollies, we hope you enjoy.
