Yummy and Simple Beetroot Soup

My husband cam home from the office last week with a bunch of beetroot. Not because his office were giving them away! A colleague of his had helped with a relatives allotment. As a thank you they were given a lot of the produce. They kindly gave the beetroot to my husband. So I decided to make a yummy soup out of the this delicious vegetable.

Beetroot Soup.

The humble beetroot has exceptional nutritional value, especially in the greens. They are rich in calcium, iron, vitamins A and C and they are a good source of folic acid. They are also an extremely good source of fibre, manganese and potassium. The greens should not be overlooked as they too can be cooked up and enjoyed in the same way spinach can.

For a long time beetroots have been used for medicinal purposes, primarily for disorders of the liver as it can help to stimulate the liver’s detoxification processes. The plant pigment that gives beetroot its rich, purple-crimson colour is betacyanin, a powerful agent, thought to suppress the development of some types of cancer. Beetroot is rich in fibre, exerting effects on the bowel function, which may assist in preventing constipation and help to lower cholesterol levels too.

So with all this in mind and my wonderful bunch of beetroot I ventured into my kitchen and brought the slow cooker out from the cupboard. I threw all the ingredients in and I made a lovely slow cooked soup. The reason I love my slow cooker is because the slower you cook your food the more nutrition there is left in it. Don’t worry if you haven’t got a slow cooker I have done it without too. The bonus about this recipe is you can adapt it to a vegan, vegetarian or a meat eater meal. However, I would highly recommend getting one as it’s a great investment.

Serves 4

Equipment

  • Chopping board

    Beetroot Soup

  • Sharp Knife
  • Peeler
  • Garlic press
  • Jug
  • Slow cooker or large saucepan
  • Food processor or hand blender

Ingredients

  • Beetroot x 1 kg
  • Red onion x 2 medium
  • Garlic
  • Homemade chicken stock or vegetable stock x 500mls (See http://www.alexisrealfoodwagon.com for more details)
  • Salt and pepper
  • Yogurt or coconut cream optional

Method

  • First peel and chop your vegetables and they can be chunky for this recipe too.
  • Place all the ingredients, apart from the yogurt or coconut cream, into the slow cooker.
  • Leave them on a low heat for at least two hours or until the beetroot has softened.
  • (Personally, I leave it on for eight hours as it tastes fantastic but if you only have a few hours then that’s good too.)
  • Once the beetroot is soft, turn the slow cooker off and leave to cool for 30 minutes or so.
  • Next place the mixture into the food processor and blend the ingredients together.
  • Put the blended mixture back into the slow cooker and heat through until hot again.
  • Finally serve into bowls and add a tablespoon or two of yogurt or coconut cream if vegan to the soup.

On the hob method.

  • First peel and chop your vegetables and they can be chunky for this recipe too.
  • Place all the ingredients, apart from the yogurt or coconut cream, into the saucepan.
  • Bring the ingredients to the boil and leave to simmer for 30 – 40 minutes, or until the beetroot is nice and soft.
  • Once the beetroot is cooked, remove from the heat and leave to cool for 30 minutes.
  • Add the mixture to the food processor and blend together.
  • Place back into the saucepan once the mixture is smooth and heat until hot again.
  • Finally serve into bowls and add a tablespoon or two of yogurt or coconut cream if vegan to the soup.

Beetroot Soup

Ted, I have to admit, is not a great soup lover but eats a little bit of it. Howard on the other hand loves soup and bread and he ate the whole lot. For me and my slow cooker, this is a quick, simple meal that the whole family can enjoy. So please, as always, if you decide to make this meal enjoy it.
