Leftover Herby Chicken Stew with Mash

Herby Chicken Stew is a great way to, yes, eat more herbs, but also to eat the leftover chicken. I made this stew on Sunday in the slow cooker as I’ve had some leftover chicken in the freezer for a few weeks that needed heating up. In the slow cooker it’s really quick and easy to do. However, I have made this recipe on the hob before and I have to say it’s a great meal to make for the family.

Serves 4

Equipment needed

  • Sharp Knife
  • Chopping board
  • Vegetable peeler
  • Slow cooker or saucepan
  • Jug
  • Teaspoon

Ingredients

  • Cooked chicken x 500g
  • Onion x 1 large
  • Celery x 2 sticks
  • Butternut squash x 200g
  • Carrots x 2 medium
  • Courgette x 1
  • Chicken stock x 250 mls
  • Dried oregano x 1 tsp
  • Fresh thyme x 4 sticks
  • Bay leaves x 2
  • Salt and pepper
  • Olive oil for frying pan only

Method in the slow cooker

  • Start by peeling the onion, butternut squash and carrot and then chop these along with the celery and courgette.
  • Put them in the slow cooker with the chicken stock and add the dried oregano, thyme, bay leaves and salt and pepper.
  • Leave on a low heat for six to eight hours or on a high heat for four hours.
  • Add the chicken at the end and let it heat through for 30 minutes.
  • Finally make the mash and serve with the chicken.

Method on the hob

  • Start by peeling the onion, butternut squash and carrot and then chop these along with the celery and courgette.
  • Heat the saucepan on a medium temperature and add the olive oil.
  • Put the chopped vegetables into the pan and stir until the onion becomes translucent.
  • It should take around 5 minutes for this to happen.
  • Next add the chicken stock, dried oregano, thyme and bay leaves, bring to the boil and leave to simmer for around 30 – 40 minutes.
  • Finally before you want to serve this meal, add the chicken to warm through in the stew.
  • Make the mash and enjoy.

We had this meal with mash and steamed cabbage.You could have it with a jacket potato or maybe sweet potato mash. Alternatively, you could try it with dumplings or pasta. The meal is full of flavour because of the herbs used and we all enjoyed it. The meal is delicious whatever way you decide to eat it.
