Slow Cooked Pork with Pumpkin, Apples and Sage

Slow cooked Pork with Pumpkin, Apples and Sage is a delicious dish that can be enjoyed during the week or at the weekend without too much hassle. If you have a slow cooker it is one of the best ways to cook and eat vegetables and fruit. The slower the food is cooked the more nutrition it retains. Pumpkin is incredibly rich in antioxidants, minerals and vitamins so is fantastic for the slow cooker.

The pumpkin and apple in this recipe makes it fairly sweet to eat. Pumpkin is a fruit, like an apple, because it has seeds. It is fast growing on a vine that creeps along the surface in a similar fashion to that of the cucurbitacease family. The cucumber, squash and cantalopes are part of the pumpkin family and grow in the same way.

Pumpkins are a rich source of minerals like copper, calcium, potassium and phosphorous. Also they are rich in dietary fibre, antioxidants and vitamins. They are fantastic for weight loss, better immunity and young looking skin. The dish is a simple, quick and easy dish to prepare and put together. So it gives you more time to relax and then enjoy your dinner.

Serves 4

Equipment needed

  • Sharp knife
  • Chopping board
  • Baking Tray
  • Slow cooker or large saucepan
  • Plate
  • Slotted spoon

Ingredients for the stock

  • Bones from the pork
  • Carrots x 1
  • Leek x 1
  • Tomatoes x 2
  • Celery x 2 sticks
  • Garlic x 2 cloves
  • Bay leaves x 2
  • Peppercorns x 6
  • Salt x 1/4 tsp
  • Water x 1 litre

Ingredients for Main dishes

  • Pork Chops x 600g 2 large with bones
  • Onions x 2 large
  • Garlic x 2 cloves
  • Pumpkin x 500g
  • Apples x 4 medium
  • Carrots x 2 large
  • Sage x 8 – 10 leaves or 1 small handful
  • Salt and pepper to taste
  • Olive oil for drizzling

Method for making the stock

  • Preheat the oven to 180°.
  • Start by removing the meat from the bone and put the bones on a baking tray.
  • Drizzle olive oil over them.
  • Place in the oven and cook for about 20 – 3o minutes.
  • Put the cooked bones in the slow cooker.
  • Along with the carrots, leeks, celery and onions cut into chunks, the tomatoes quartered, the garlic, peppercorns, bay leaves and salt.
  • Leave to stew on a low heat for 12 hours or overnight.
  • Once cooked,  turn the slow cooker off and leave to cool.
  • Next remove the stock by passing it through the collander. It will remove the bones and cooked vegetables.
  • Pour the liquid back into the slow cooker and put it back onto a low heat.

Method for making the main dish

  • Cut the pork into cubes and set aside.
  • Then chop the onions and slice the carrots.
  • Peel the apples, remove the core and quarter.
  • Remove the skin of the pumpkin and chop into quarters.
  • Scoop out the seeds and cut the pumpkin into 1 inch thick pieces.
  • Slice the garlic and then the chop the sage.
  • Add all the ingredients to the slow cooker and leave for eight hours.
  • Or on a high heat for about 4 hours.
  • The pork should start to fall apart at the end of the cooking process.
  • Serve with brown rice or mashed potato and steamed cabbage, then enjoy.

Method for oven.

  • Preheat the oven to 160°C.
  • Cut the pork into cubes and set aside.
  • Then chop the onions and slice the carrots.
  • Peel the apples, remove the core and quarter.
  • Remove the skin of the pumpkin and chop into quarters.
  • Scoop out the seeds and cut the pumpkin into 1 inch thick pieces.
  • Slice the garlic and then the chop the sage.
  • Put the large saucepan on a medium to high heat.
  • Fry the pork in a little olive oil and then remove from the pan with the slotted spoon onto the plate.
  • This can be done in two batches.
  • Next add the onion, garlic and carrots to the pan and fry until the onion is translucent.
  • Add in the pumpkin and apple and fry for a further two minutes.
  • Finally add the stock and sage.
  • Then add the salt and pepper to taste.
  • Cook in the oven for at least two hours.
  • Once the time is up the pork will fall apart and be lovely and tender.
  • Serve with brown rice or mashed potato and steamed cabbage and enjoy.

My husband, Howard and son Ted really enjoyed this dish. It was slightly sweet and they both have a very sweet tooth. We ate it with brown rice that we buy from Amazon and steamed cabbage. It was yummy. The brown rice we buy comes in bulk so it means we only buy it every few months. It saves us a fortune on food. Mash is also really nice with this dish.
