Dried Plum and Banana Porridge

Dried Plum and Banana Porridge is such a delicious dish and it’s so great at this time of year. It’s a warming breakfast that is simple to make and it’s really easy to cook. Ted, my son, Howard, my husband and I had this last weekend for breakfast.Everyone really enjoyed it and Ted had it again mid week. Although, he does have a very sweet tooth but he now loves porridge.

The porridge we use is gluten free and I soak them overnight as I find them much easier to digest. Soaking oats overnight means their digestibility improves greatly. The reason is their starches breakdown and their natural phytic acid is greatly reduced. It makes them easier for the body to absorb.

By adding bananas and dried plums (prunes) to the porridge I have given it extra nutrition. These fruits are nutritionally rich and both provide a number of health benefits due to the nutrients they contain. Both fruits could help fight against heart disease, weight gain, type 2 diabetes and obesity.

A warming bowl of porridge for breakfast to me is a great way to start my day. It helps my family and I get started. Also it’s great on a cold winter’s day because I feel like it keeps me warm when we have to venture outside on these colder mornings. It’s delicious and well worth a try.

Serves 1

  • Bowl
  • Saucepan
  • Chopping board
  • Sharp knife
  • Tablespoon
  • Teaspoon
  • Stirring spoon

Ingredients

  • Gluten free porridge oats x 45g
  • Brown rice milk x 125mls
  •  Dried plums x 6 – 8 destoned
  • Bananas x 1 medium
  • Coconut oil x 1 tbsp
  • Almond butter x 1 tbsp
  • Cinnamon x 1 teaspoon

Method

  • Weigh the porridge into the bowl.
  • Then measure the milk and pour onto the porridge.
  • Roughly chop the dried plums.
  • Add these to the porridge and milk.
  • Then add 1 teaspoon of cinnamon and stir.
  • Place the mixture into the fridge overnight.
  • In the morning, remove the mix and put it into the saucepan.
  • Along with the banana chopped up into slices, the coconut oil and the almond butter.
  • Put the saucepan on a medium to high heat.
  • Stir continuously until the porridge thickens to a constistency of your choice.
  • It should take around 5 – 10 minutes to cook.
  • Finally remove from the heat once cooked, place back into the bowl and enjoy.

As I mentioned earlier we all enjoyed this breakfast last weekend. Preparing it the night before means not much preparation in the morning. So it’s a quick dish that can be made in minutes. In this house having a fast breakfast is great for a certain little, hungry man named Ted and his mum. However you decide to enjoy this breakfast, as always, please enjoy.
