So my husband has been asking me to make an Apple Cake from, what feels like, the day we met. Finally, after nearly ten years of being together I got around to trying it. To be honest, I was slightly afraid to make it because his mother used to make him this cake when he was a child. So I didn’t want to ruin his memory of it. Thankfully he informed me after I had made it that he couldn’t really remember what his mothers tasted like and that mine was delicious. Phew!

 

Apple cake is a popular dessert that is made with the main ingredient of apples. The cake is made through the process of slicing the sweet fruit to add fragrance to a plain base. Traditional apple cakes go a step further by including various spices such as cinnamon or nutmeg. Crushed or ground nuts like walnuts or almonds can also be added to the batter.

The Jewish tend to eat a dairy free version of apple cake that can be eaten before a meat meal. Dorset, Devon and Somerset in England have their own versions of apple cake. They may include apple juices from their regions as part of the recipe but it is not necessary. Apples also create a great binding for a dry cake because they are moist.

My apple cake I don’t think is the same as my mother in laws. (I had a lengthy discussion with my husband about it.) Although it’s delicious and the reason I know is my little family ate nearly a whole cake in a few days. So well worth a try!

  • Apple corer
  • Slicer
  • Mixing bowls x 2
  • Whisk
  • Cake tin
  • Baking paper
  • Spoon
  • Skewer

Ingredients

  • Wholemeal flour or ground gluten free oats x 300g
  • Eggs x 3 large
  • Coconut oil x 125g
  • Maple syrup or coconut sugar x 125g
  • Baking powder x 3 tsps
  • Cinnamon x 1 tsp
  • Nutmeg x 1/4 tsp
  • Cloves x 1/4
  • Apples x 4 eating apples

Method

  • Preheat the oven to 180°.
  • Start by weighing and measuring the ingredients.
  • If using gluten free oats then put them in the food processor and blend them until they resemble a flour.
  • It should only take a few minutes
  • Mix together the flour, baking powder, cinnamon, nutmeg and cloves.
  • Next whisk the eggs and the sugar together and add to the flour mixture.
  • Whisk all the ingredients together until a thick, liquid is formed.
  • Then add the coconut oil and whisk again.
  • Set the cake mix aside.
  • Core the apples and then slice them thinly.
  • Line the cake tin with the baking paper and spread the sliced apples on the bottom.
  • Spoon over the cake mixture and put it into the oven for 25 – 30 minutes.
  • Once the cake is cooked you can put a skewer into it and if it comes out clean the cake is cooked.
  • Leave to cool completely.
  • Once cooled serve with yogurt and honey or coconut cream and maple syrup.

Apple Jonathan Cake was a massive success in this house and we thoroughly enjoyed eating it. It’s a simple and easy recipe to follow with tasty results. If you want to make this cake in advance it can be frozen too. It can also be sliced into individual portions and frozen. However you decide to eat this cake, as always, enjoy!
