Honey and Banana Cake

We love a slice of cake in this house and on Saturday afternoon I was about to bake a favourite of ours, Banana Bread, when I realised I didn’t have any maple syrup. So that’s when I wondered what this cake would taste like with honey instead. Honey is a great sugar to use in sweet and savoury dishes and it worked really well in this cake too.

Research suggests local honey that is bought as close to where you live as possible can help build an immunity to seasonal allergies. There is not much research to support this idea but many people claim using honey has helped to provide allergy relief.

Allergies are triggered by exposure to the same allergen over time. A person may not be allergic to a certain plant initially but they can become allergic to it when they spend a certain amount of time in the same environment as the plant.

Honey will contain tiny amounts of the pollen from that plant. Therefore the honey will act as a sort of vaccination when taken in small amounts. A few teaspoons a day for several months can provide relief from seasonal pollen related allergies. Honey is brilliant for the mind and body and it’s great in this cake. Well worth a try.

Honey and Banana Cake

  • Mixing bowls x 2
  • Scales
  • Fork
  • Mixing spoon
  • Teaspoon
  • Tablespoon
  • Small saucepan
  • Loaf tin
  • Grease proof paper
  • Skewer

Ingredients

  • Ripe bananas x 3
  • Vanilla powder x 1/4 tsp
  • Eggs x 2 large
  • Coconut oil x 3 tbsp
  • Honey x 100mls
  • Baking powder x 1 tsp
  • Xanthan gum powder x 1 tsp
  • Salt x 1/4 tsp
  • Ground cinnamon x 1 tsp
  • Vanilla powder x 1/4 tsp
  • Ground pecans x 150g
  • Gluten free oats x 150g

Method

  • Preheat the oven to 180ºC and then line the loaf tin with the grease proof paper.
  • Next weigh and measure all the ingredients.
  • Peel the ripe bananas, add them to the bowl and then mash with the fork.
  • Once the bananas are mashed add the eggs, coconut oil and honey.
    • You can melt the coconut oil in a small saucepan if you don’t live in a warm climate.
  • Then in the other bowl mix together the ground pecans, gluten free oats, baking powder, xanthan gum powder, ground cinnamon, vanilla powder and salt.
    • You can make ground pecans in the food processor or in a nutribullet.
  • Now mix the mashed banana ingredients with the ground pecan ingredients.
  • Get the pre-lined baking tray and pour the mixture into it.
  • Then put the cake into the oven.
  • Bake for 25 – 30 minutes depending on your oven.
  • Once it is ready is should be firm and golden brown on top. Put a skewer in it to check that it is cooked all the way through.
  • If the skewer comes out clean it’s cooked.
  • Leave to cool completely before slicing and serving.

Honey and Banana Cake is delicious and we all enjoyed a slice at the weekend. It’s a quick, simple and easy recipe. It honestly didn’t take me long to make and I now have a few slices in the freezer for snacks, an after dinner treat or even breakfast. Yes, I even had the cake during the week for breakfast and it filled me up until lunchtime. However you decide to eat this cake, as always, enjoy.
