Apple, Plum, Ginger and Lime Fruit Leather strips

When I first made this a couple of years ago my son Ted could not eat enough of it. Then for one reason or another, I’m not really sure why, I stopped making it. However, I’ve been meaning to reintroduce this food to Ted and recently I did it. I’m so pleased I did as he still loves it. Also, I’ve found it’s a great way to get root ginger and lime into him too.

Real fruit leather is pureed fruit that is dried in the oven for a long time. It’s a low calorie snack that is really convenient and light weight. Depending on what fruit you are using this delicious treat can add up to 1 1/2 servings of fruit and it contains no added sugar. It’s also a great way to get vitamin C into the diet. Plus I can imagine it’s great for kids who are reluctant to eat whole fruit as it looks more like sweets/candy than fruit.

Ted really loves fruit leather and his new favourite question is have you got any today mummy. It’s a quick and simple recipe. It does take a long time to cook in the oven but I like to put it in overnight and then it’s all done for the morning. All you have to do is remove the grease proof paper, cut into strips and roll up. Well worth a try.

Apple, Plum, Ginger and Lime Fruit Leather

  • Sharp knife
  • Chopping board
  • Large saucepan
  • Stirring spoon
  • Nutribullet, food processor or stick blender
  • Baking tray
  • Grease proof paper
  • Plastic brush

Ingredients

  • Apples x 4 medium
  • Plums x 350g (or about 12 – 15 large)
  • Ginger x 2 cm piece
  • Lime x 1 juice
  • Water x 50 mls
  • Sunflower oil x 2 tsps

Method

  • Start by chopping the apples and remove the core.
  • Put them into the large saucepan.
  • Cut the plums in half and remove the stones.
  • Add these to the saucepan.
  • Peel the ginger, chop into thin slices and place into the saucepan.
  • Chop the lime in half and squeeze this into the saucepan.
  • Add water to the pan and turn it onto a high heat.
  • Once the pan begins to boil turn the heat down and leave to simmer for 30 – 40 minutes.
  • Or until the apples are soft.
  • Stir with the spoon occasionally.
  • Remove from the heat and leave to cool.
  • Once completely cool turn the oven on to about 80°C.
  • Next pour the sunflower oil onto the baking tray and spread with the plastic brush.
  • Cut a sheet of grease proof paper bigger than the baking tray and place on top.
  • Next pour the mixture into the nutribullet, food processor or bowl if using a hand blender and blend.
    • If using a nutribullet you may need to do this in two parts.
  • Then, once all the ingredients are blended, pour the mixture onto the baking tray.
  • Now try to spread the mixture as evenly as you can.
    • I occasionally use two baking trays with grease proof paper if I want the mixture to go further.
  • Once spread evenly across the base of the tray put it into the oven for 8 hours.
    • You may need longer depending on the thickness of the fruit leather.
  • Once cooked the fruit leather will be completely dry and will resemble a piece of, you’ve guessed it, leather.
  • Leave to cool and then cut into strips and roll up.

As I mentioned earlier my son Ted loves his fruit leather which makes me so happy. It means I can introduce foods like lime and ginger into his diet. I prefer to make my fruit leather around dinner time and then it’s ready to pop in the oven overnight. It’s a brilliant snack and it also makes a great lunchbox treat. Plus it’s simple, quick and easy to do. A perfect treat the whole family can enjoy. However you decide to enjoy this dish, as always, enjoy.
