Pea Mint and Butter Bean Soup

As the cold winter nights draw in all I crave is comfort food and soup is one of those foods that makes me feel warm and cosy on the inside. Soup is such a simple meal to feed the family with and I love it. I have three great recipes that are really quick, simple and easy to do. Although I really enjoy cooking there are times when I just want speedy dinners and these three recipes are super fast. As well as being able to make these soups in turbo time, they are highly nutritious and soup has history.

As far back as 20,000 BC there is evidence that soup existed. At this time boiling was not a common cooking technique until the invention of waterproof containers. Back then they would have come in form of clay vessels or animal hides. Before this watertight baskets of bark or reeds were used. So to boil hot water we would have used hot rocks. The methods was also used to cook acorns and other plants.

The word soup comes from the French word soupe which means ‘broth’. Plus the French word restaurant originates from the meaning ‘to restore’ and it was first used in France in the 16th century. Soupe was used to refer to a highly concentrated, inexpensive soup that was sold by street vendors. At this time, it was advertised as an antidote to physical exhaustion. Soups are always easily digested and they were prescribed as a medicine for people since ancient times.

Since the 1990s, the tinned soup market has boomed. Soups are now marketed as ‘ready-to-eat’ and with the invention of microwavable bowls the soup market has expanded. Tinned soup for so many people offers convenience, especially in the workplace and they are popular at lunchtime.

Although tinned or fresh soup bought from the supermarket are good, nothing beats a homemade soup. When we use nutritious vegetables bought from the local farm shop and homemade stock, we are filling our bodies with goodness. If we have any leftovers we will have this meal again at lunchtime or we will freeze it. Soup once defrosted from the freezer makes a fantastically swift dinner.

So below are three of our favourite soups which we know you will love as much as we do. As I mentioned earlier, they are quick simple and easy to do and also really quick if you’re removing it from the deep freeze. All of these recipes are well worth a try.
