Seafood Pesto and Pasta

As I have mentioned in lots of blog posts, Ted and I love fish but Howard is not too keen. I’m forever trying to think of ways to help my husband enjoy fish more often. (And not by feeding him scampi or fish fingers!) That’s when I decided to try a seafood pesto. My husband enjoys my pesto and he likes salmon and prawns occasionally too. So I thought I would combine the two with pasta and Ted and I felt the result was delicious. The jury is still out with my husband.

Eating fish can prevent heart attacks and strokes, can lower blood pressure and may even help ward off depression. All types of fish have high amounts of protein and low levels of saturated fat. It also contains vitamin E, an important antioxidant. Seafood benefits people with diabetes, can contribute calcium to a diet and may reduce the risk of asthma in children.

In this recipe I grill the salmon, and the prawns are already cooked. Then all I have to do is make the pesto and cook the pasta. It’s that simple and easy to do. It’s a quick cooked meal in minutes, and as I said earlier, Ted and I really enjoyed it. If you all love fish in your house then you will enjoy this dish too.

Seafood Pesto and Pasta

  • Baking tray
  • Large saucepan
  • Colander
  • Stirring spoon

Ingredients

  • Pesto Recipe
  • Salmon x 500g
  • Prawns x 150g
  • Brown rice pasta x 200g

Method

  • Turn the grill onto a high heat.
  • Put the salmon on the baking tray.
  • When the grill is hot then place the salmon underneath.
  • Meanwhile make the pesto as per the recipe.
  • Cook the pasta as per the packet instructions.
  • The salmon will take around 12 – 15 minutes to cook.
  • Once it’s cooked remove from the grill.
  • Remove any skin and put the skin-less salmon back onto the baking tray.
  • When the pasta has cooked, drain it through the colander and put on top of the salmon.
  • Now pour the sauce on top of the salmon and pasta.
  • Mix them together and then serve and enjoy.

Seafood Pesto and Pasta

Seafood Pasta is a great meal that can be served warm or cold. So it could be made in the middle of winter as a warming dinner or in summer with a salad. It’s also good as leftovers the next day too. A fantastic dish to take to work as lunch and for extra greens you can add beans or more spinach to it. However you decide to eat this meal, as always, enjoy.
