The weather has been hitting highs of 30°C for almost six weeks in the UK. Although, I love the fact that it’s warm and sunny, being British, I’m beginning to miss the rain. I know, us Brits, we moan when it’s too hot and we moan when there’s too much rain. There is simply no pleasing us lot on this island. (As you can probably tell from Brexit!)

So as it’s so hot Ted and I went into the kitchen to make ice lollies for our little family to eat. He has been asking for his usual favourite ice lolly but I’m not a fan of him having those ice lollies every day. Preferably, I would like him to eat homemade lollies as I know exactly what is in them.

With this in mind I then asked Ted what sort of ice lollies he wanted to make, and these are what he came up with. I have to say they are delicious and a great first attempt. I give my son 10/10. We also bought ice lolly molds from Amazon. I thought these looked like the lolly molds his favourite ice lolly comes in. So hopefully he won’t be missing the shop bought ones in this heat.

Equipment

Ted’s Mango, Lime and Coconut Ice Lollies

  • Sharp knife
  • Chopping board
  • Fork or juicer
  • Tin opener
  • Blender or nutribullet

Ingredients

  • Mango x 200g
  • Lime x 1 juice
  • Coconut milk x 1 400g tin
  • Maple syrup x 1 tablespoon

Method

  • Start by slicing the mango and removing the skin.
  • Chop into cubes and put into the blender or nutribullet
  • Cut the lime in half and juice using the fork or juicer.
  • Squeeze the juice into the blender.
  • Open the can of coconut milk with the tin opener.
  • Pour the contents into the blender.
  • Add the maple syrup and blend all the ingredients together until they are smooth.
  • Next pour the contents into the molds and put into the freezer.
  • Freeze for at least six hours or overnight.
  • Then serve and enjoy.

My son Ted and husband Howard loved these ice lollies. They were a big hit in our house and we will definitely be making them again if this warm weather continues. They are quick, simple and easy to do. Ted really enjoyed making the ice lollies and he loved eating them even more. They will keep in the freezer for up to six months and they make a great after dinner treat or mid afternoon snack. However you decide to eat these ice lollies, as always, enjoy.
